MARINATED ZUCCHINI SALAD


4 zucchini, thinly sliced
1 c. mushrooms, thinly sliced
2 sm. cans of artichoke hearts,drained & sliced
2 sm. cans of bamboo shoots, drained
1 (8 oz.) bottle Italian saladdressing
1 env. Original Hidden Valley Ranchdressing mix

Add all but dressings together in a large bowl. Mix together dressing and dressing mix. Pour over mixed ingredients. Marinate several hours or overnight.

The only genus of bamboo plants that are native to the US is Arundinaria gigantea. The genus consists of one species and 3 sub species that are identified, more probably exist since since the genus commonly flowers.
