Basic Fried Rice - With Variations

 

Ingredients

    1. 4 cups brown rice, cooked, cold
    2. 2 green onions, chopped
    3. 2 tablespoons oil, to 4
    4. 2 tablespoons soy sauce
    5. 1/2 teaspoon salt (optional)
    6. 1/2 teaspoon sugar (optional)
    7. 1 teaspoon sherry wine
    8. 2 eggs, beaten
    1. roast pork (optional)
    2. roast beef (optional)
    3. lamb, roasted (optional)
    4. duck, roasted (optional)
    5. turkey, roasted (optional)
    6. chicken, roasted (optional) or chicken, boiled (optional)
    7. boiled ham (optional) or baked ham (optional)
    8. bacon, pan fried (optional)
    9. Chinese sausage, steamed (optional)
    1. crabmeat, flaked (optional)
    2. lobsters, boiled and diced (optional)
    3. shrimp, cooked (optional)
    1. bamboo shoots (optional)
    2. bean sprouts, blanched (optional)
    3. celery, blanched (optional)
    4. cucumbers, add at the very end (optional)
    5. green peas, parboiled (optional)
    6. lettuce, add at the very end (optional)
    7. mushrooms, fresh, canned (soak if dried, optional) (optional) or dried mushrooms ( soak if dried) (optional)
    8. onions (optional)
    9. bell peppers (optional)
    10. pimientos (optional)
    11. scallions (optional)
    12. string beans, parboiled (optional)
    13. tomatoes, peeled, add at the very end (optional)
    14. water chestnuts (optional)
    1. 1 tablespoon almonds, blanched and chopped (optional)
    2. 1 tablespoon peanuts, chopped (optional)
    3. 1 tablespoon walnuts, blanched and chopped (optional)
    4. 1 tablespoon raisins (optional)
  1. Meat Choices (use 1 cup)

    Seafood Choices (use 1 cup)

    Vegetable Choices (use 1 cup)

    Miscellaneous Choices

Directions

  1. Dice or shred meat and vegetables.
  2. Heat oil in wok; stir-fry green onions.
  3. Add fresh vegetables and stir-fry to soften.
  4. Add canned vegetables and meat; stir-fry to heat and blend flavors.
  5. Remove from wok.
  6. Heat some more oil if needed, to smoking.
  7. Add rice and heat through completely.
  8. Return vegetables and meat to wok, add soy sauce, salt, sugar and sherry.
  9. Fold in eggs and turn off heat just as they begin to set.
  10. SUGGESTED combinations:.
  11. beef, onions and green pepper.
  12. bacon, onions, lettuce and tomatoes.
  13. chicken, onions and bean sprouts.
  14. chicken, bamboo shoots, mushrooms and cucumber.
 
Bamboo shoots will emerge from the ground for a few inches and usually pause for about a week before continuing to shoot skyward. They are covered by a hard protective sheath at each node which is deciduous and falls away once the shoot fully extends outward. The sheath has several functions, one of which is to protect the new shoot as it extends its internodes. At this stage the new shoots have a high water content and are very soft. The diameter of the shoot at its base is the diameter that the new culm (cane) will have when fully mature and throughout its life. New shoots extend upward by extending its internodes similar to the way a telescoping antenna will extend by pulling on it. They are fully extended and hardened off in apx 6 weeks from emerging from the ground.
